My favorite slow cooker recipes
I am late to the slow cooker party, but I am so happy to finally join in on the fun.
Some recipes are seriously just dump the ingredients, and set the timer… that easy. They also tend to make a little extra servings this way we can prep for a few meals.
Here are some of my favorites I’ve been regularly making:
Vegan Lentil Sloppy Joes
… amazing. Sometimes I throw in 2 extra cups of water, and 2 cups of veggie broth and a cup of quinoa to change it up, stretch it out, and bulk up a bit.
African Inspired Peanut Stew
...delicious, in love!
Vegan Split Pea Soup
Simple and so much better than canned
Lentil Tortilla Soup
Easily made vegan. Instead of heavy cream I put a little plain cashew yogurt.
Creamed Corn
Ok this recipe I totally veganized by using vegan cream cheese, almond milk, and miyokos vegan butter. YUMMY. I used it as a side, and then it doubled as a sort of street corn for tacos.
Molten Lava Hot Fudge Cake
….DELICIOUS DESSERT. I was shocked at how amazing it was.
Chocolate Peanut Butter Oatmeal
Ok this recipe doubles as a breakfast and dessert. For dessert I added some coconut or almond whipped topping or cream :) Super tasty.
Chai Tea Latte
Here’s a slow cooker drink recipe, chai tea latte. Warm and tasty, but can also have an iced glass too. Perfect drink to make for gatherings to share.
